More cooking adventures!

In this edition of cooking adventures I am going to post three recipes! Just to save space, and time on my part. The first recipe is for Chicken with bacon and penne. This recipe makes enough for 4 servings. This was one of my favorite recipes since we started our cooking adventures, because its really pretty simple to make, and it tastes really good.

Ingredients:
About a lb of boneless skinless chicken breast.
2 yellow onions
2 cloves of garlic
about 3.5 oz of mushrooms (Its best to use fresh ones)
about 5 oz of lightly fried diced bacon. (Do not substitute in bacon bits. it does make a difference)
4 servings of penne pasta (about 14 oz)
1 tbsp of oil
14 oz of crushed tomatoes
1/2 tsp of dried oregano
about 3/4 of a cup of light creme fraiche



Instructions:

1. Cut the chicken in to small chunks.

2. Peel and slice the onions.

3. Cut up the mushrooms.

4. Fry the bacon be careful not to burn it. We found it easiest to cut the bacon into chunks before you fry it, or to buy pre-chunked bacon and fry that. After its cooked, place it on a paper towel.

5.Boil your pasta using the directions on the packaging.

6. Fry the chicken, onion, garlic, and mushrooms in oil, but don't let them get brown.

7. Season with salt and pepper

8. Add the crushed tomatoes and oregano to the pan with the chicken and vegetables

9. Simmer for about 10 mins.

10. Stir in creme fraiche, and add more salt and pepper if necessary.

11. Cook for another few minutes, then sprinkle bacon on top.

12. Serve over pasta.

Thats it! It's a simple and delicious dish!

The next dish is French onion soup. This recipe makes enough for four servings. Its really delicious, and fairly easy to make! I made it all on my own during the day.

Ingredients:
3 yellow onions
about a lb of potatoes
2 tbsp of butter
1 tbsp of flour
about 5 cups of chicken broth
1 bay leaf
1 tsp of thyme
1tsp of oregano
pepper

and to make the croutons for the soup you will need:
4 slices of white bread (If you don't like white bread, then just use whatever kind you prefer, I used wheat bread)
and 5 oz of grated cheese (Pick your favorite flavor) (There was no translation for the type of cheese we used, If you want to know, it was called gratin cheese)

Instructions:

1. Set the oven to 450 degrees

2. Peel and cut the onions and potatoes

3. In a pot fry the onions and potatoes in the butter until golden.

4. Add the broth, and spices to the pot

5. Cook on low heat and stir for about 15 mins.

6. If needed add more spices to the pot.

7. Put the bread for the croutons onto a baking pan lined with parchment paper.

8. Sprinkle with cheese.

9. Bake in the center of the oven for about 5 mins or until they are golden brown and crispy

10.  Cut the bread into sugar cube sized cubes.

11. Serve soup with croutons, and enjoy!

and the last recipe for this post will be one of my favorites as well, its a polish sausage called kabanos, with potatoes and a creamy sauce. This also makes 4 portions.

Ingredients:
about 2lbs of potatoes
2 cloves of garlic
1/2 tsp of thyme
1 tbsp of canola oil
salt
pepper
1/2 of a cucumber
3/4 of a cup of cooking yogurt (greek yogurt)
1/2 of a lemon (you will be using the juice from it)
1/2 lb kabanoss (or really any sort of sausage that you want that is not too heavily seasoned)


Instructions:

1. Set the oven to about 425 degrees.

2. Place a baking tray in the oven while its heating, for the potatoes

3. Cut the potatoes into wedges and place them into a bowl.

4. Press 1 clove of garlic into the bowl, also add the thyme, half the oil, and the salt and pepper.

5. Mix up the bowl, to cover the potatoes in seasoning.

6. Take the tray out of the oven and place the potatoes on to it.

7. Place the tray back in the oven on the middle rack, cook for about 25 mins or until the potatoes are soft.

8. Peel and grate the cucumber.

9. Take the cucumber shavings and squeeze them in a towel, in order to get the majority of the water out.

10. Mix the cucumber shavings with the yogurt.

11.Press the other garlic clove into the bowl with the shavings and yogurt.

12. Juice the lemon into the bowl, then season lightly with salt and pepper.

13. Fry the sausage in a  pan with the rest of the oil.

14. Serve the sausage with the potatoes and the creamy sauce, and little salad.

That's all the recipes that I feel like translating at the moment. I probably will do some more later! I hope that you have found this helpful, and hope that you try these dishes! I think they are all delicious!
